Some recipes just taste like home. With Heritage Month here and a few cool evenings still lingering, Carmen Niehausā melkkos is one worth bringing back to the table.
Her version adds CarmiƩn Chai Espresso and cinnamon to this traditional South African favourite, finished with cinnamon sugar and poached pears.

Ingredients
- 1.25 litres (5 cups) full cream milk
- 1 cinnamon stick
- 15 ml (1 tbsp) CarmiƩn Chai Espresso (placed in a tea infuser)
- 250 ml (1 cup) cake flour
- Pinch salt
- 5 ml (1 tsp) baking powder
- 60 ml (¼ cup) butter
Optional Poached Pears
- 250 ml (1 cup) sugar
- 500 ml (2 cups) water
- 6 pears, diced
Cinnamon Sugar
- 80 ml (ā cup) sugar
- 10 ml (2 tsp) ground cinnamon
Method
- Heat the milk with the cinnamon stick and CarmiƩn Chai Espresso until just boiling.
- In the meantime, make the crumbs by rubbing together the flour, salt, baking powder and butter until the mixture resembles damp coarse sand.
- Remove the cinnamon stick. Stir the crumbs into the milk with a wooden spoon. Continue stirring until thickened and boiling. Simmer for about 5 minutes. Remove from the heat, cover and let stand for 10 minutes.
- For the pears, bring the sugar and water to the boil. Add the diced pears and poach for 10 minutes. Mix together the cinnamon sugar.
- Sprinkle cinnamon sugar into serving bowls, spoon over the melkkos, top with poached pears and a little syrup, then serve.
